Spiraled Zucchini Noodles

This recipe is not only filling, it’s super fun and easy for kids to help out. We love to replace processed foods with anything fresh, and what better way to do so than to use zucchini rather than pasta?


We use the Spirooli, now called the Paderno World Cuisine Vegetable Spiralizer, to create our perfect, quick, easy and delicious zucchini noodles. It can be used to noodle any vegetable from carrots, to jicama, to squash. It’s a safe, fun tool to get kids involved in the kitchen, which will make them more likely to try new foods since they put their time and hard work into making it!


Ingredients

  • 1 small organic white onion, finely chopped



  • 2 medium organic tomatoes, chopped

  • 2 cloves garlic, minced

  • ¼ Cup organic low sodium vegetable broth

  • 2 jars low sodium organic tomato sauce

  • 2 Cup organic mushrooms, chopped

  • 2 Cup organic spinach, chopped

  • 1 large organic carrot, chopped

  • 3 stalks organic celery, chopped

  • 5 oz. lean ground turkey or ground tempeh if you’d like to make it plant-based

  • 1 Cup fresh organic basil, chopped

  • 2 Tbsp thyme

  • 1 Tbsp rosemary

  • 1 Tbsp oregano

  • 1 Tbsp parsley

  • 1 Tbsp black pepper

  • 1 Tbsp salt

  • 2 large, thick Summer Squash

  • Bragg’s Nutritional Yeast (can be found at any health food store- great source of B12, tastes like cheese!)


Appliances Needed

  • Large non-stick stock pot

  • Wooden spoon

  • Measuring cup

  • Measuring spoon

  • Cutting board

  • Kitchen knife

  • Vegetable Spiralizer

  • Steamer basket

  • Medium pot


Methods

  1. In a large non-stick stock pot, simmer the onions and garlic in the vegetable broth until transparent.

  2. Add the chopped tomatoes, carrot and all spices, let simmer for 2-3 minutes to absorb the flavor.

  3. Add the celery, mushrooms, basil and tempeh, add additional ¼ C of vegetable broth. Let simmer for 3-4 minutes.

  4. Add the spinach and stir until the spinach is wilted and shrunken. Then add the tomato sauce and let simmer for about 20 minutes.

  5. While sauce is simmering, safely cut your spiral zucchini noodles with your vegetable spiraling machine.

  6. In a medium steamer basket over a pot of boiling water, steam zucchini noodles for 5-7 minutes, until slightly soft.

  7. Top steamed zucchini noodles with your delicious sauce and Nutritional Yeast, to taste.

  8. Enjoy your high fiber, no sugar added meal!
