Lean Green Mashed Potatoes

Are you looking for a way to add a little extra nutrition to your everyday mashed potatoes? Try our flavorful Broccoli Garlic Mashed Potato recipe to add a powerhouse of iron and calcium, while having kids and adults wanting more! Tip- leave the skin on the potatoes to get extra fiber in the recipe and enjoy! Ingredients

>2 lbs. organic red skin potatoes (washed and scrubbed)

>1 stalk organic broccoli (washed)

>2 Tbsp. finely chopped fresh garlic

>3 Tbsp. organic ground lemon pepper

>1 Cup organic unsweetened almond milk

>2 Tbsp ground sea salt


Cooking Utensils

>Large stock pot

>Liquid measuring cup

>Tablespoon measure

>Electric hand mixer


Directions

  1. In a large stock pot, boil the 2 lbs. of potatoes for 45-60 minutes on medium heat.

  2. Add the broccoli after 30 minutes of boiling the potatoes, let boil until potatoes and broccoli are soft.

  3. Drain water, remove from heat.

  4. Add the remaining ingredients to the pot.

  5. With an electric hand mixer, mix all ingredients together until the mashed potatoes have reached a consistency to your liking.

  6. Enjoy with your healthy protein and vegetables of choice.
