Honestly Delicious Black Bean Brownies


Our 17th president was one of our most memorable and impactful, so it is fitting that we also celebrate his birthday today on President’s Day.

Many refer to him as “Honest Abe” as Abraham Lincoln was a man of his word and high ethics. He led our country during the Civil War and under his leadership we put an end to slavery.

In honor of him, we are sharing a favorite treat, which is honestly delicious, rich in fiber, minerals, and iron. A family favorite for many, as these black bean brownies are easy to make and effortlessly provide us with so much nutrition! We encourage you to spend your day off today cooking up a batch with your kids.

Ingredients

-15-ounce can of salt-free black beans (rinsed and drained)

-1 ¼ cup unsweetened applesauce

-2 Tablespoons ground flax seeds

-1 Tablespoon alcohol-free vanilla extract

-1 teaspoon baking powder

-1/2 teaspoon baking soda

-1/2 cup raw cacao powder

-3/4 gluten-free oats, ground into flour

-1 cup unsweetened chocolate chips (optional)

-1/2 cup finely-chopped unsalted pistachios, heart-healthy walnuts, or any other nut or seed of choice (optional)


Directions

Preheat oven to 350.

-Place beans and applesauce in a food processor fitted with the “S” blade and process until smooth.

-Add the flax seeds, extracts, baking powder soda, and cacao and process again.

-Add flour and process very briefly, just until combined.

-Pour batter into an 8″ or 9″ square silicone baking pan.

-Sprinkle with chocolate chips and/or nuts, if using, and gently press down with your hand. Bake for 30-35 minutes until the middle does not jiggle and the toothpick inserted comes out clean. Enjoy your honestly healthy treat!
