Sugar snap peas and snow peas are wonderful veggies to eat as snacks or as a side dish to a meal. They are crunchy and delicious by themselves, but even better when you add interesting spices.

Ingredients:
2 tbsp coconut or olive oil
1/2 tsp curry powder
1/2 tsp salt
1/4 tsp ground black pepper
5 cups fresh sugar snap pea pods (16oz) and/or snow pea pods (12oz), strings removed if present
1/4 cup plain Greek yogurt
1 tbsp snipped fresh mint
Directions:
Preheat oven to 450 degrees. In a small bowl, microwave coconut oil 10 seconds or until melted. Stir in curry powder, salt, and pepper. Place pea pods in a 15×10-inch baking pan. Drizzle with oil mixture; toss to coat. Roast 15 minutes or until pea pods are tender and brown, stirring once.
In a small bowl, combine yogurt, mint, and a dash of salt. Serve peas with yogurt mixture for dipping.
