TGIF Recipe: Green Beans with Almonds

Perfect as a side dish to salmon or chicken, green beans with almonds are a great way for little ones and adults alike to get some of their daily veggies!

Roasted-Green-Beans-With-Almonds-2-Barbara-BakesKids will love the crunch of the almonds, plus they add more protein! Try sprinkling some parmesan cheese or adding some unsweetened dried cranberries for extra flavor.

You can also use haricot vert in place of green beans (they may need a minute or two less cooking time because they are slightly thinner than green beans).

Ingredients

2 tablespoons extra virgin olive oil

¼ cup sliced almonds

2 teaspoons plus ¼ teaspoon kosher salt

1 pound green beans, stem ends trimmed

¼ teaspoon freshly ground black pepper

Directions

Fill a large pot with water 2 inches from the top and let come to a boil. Place a colander in the sink. Use your fingers or a paring knife to remove the stem ends from the beans.

Meanwhile, heat the oil in a medium skillet over medium heat. Add the almonds and cook, stirring, until golden brown 2 to 3 minutes. Remove from the heat.

Add 1 tablespoon of the salt to the boiling water then add the beans and cook until just tender, 4 to 5 minutes; drain.

Add the beans, pepper (12 turns on pepper mill) and the remaining ¼ teaspoon of salt to the skillet and return to medium heat to heat through, 1 to 2 minutes. Use tongs to combine. Serves 4.

Large pot, measuring spoons, colander, measuring cups, tongs
