Many families find themselves attending gatherings this four day weekend. Typically foods served at these functions are high in processed foods and low in fruits and veggies. This recipe is packed with nutrients, flavor, and fiber. These are a great addition to any labor day food gatherings. Bring them along for a healthy option
Chicken and Veggie Skewers
Grilled meat is usually a staple at gatherings and BBQs, we always encourage upping heart and gut healthy fiber at any opportunity. Not only does the fiber in vegetables help keep you full, it helps things move along digestively and helps keep the probiotics in some foods we consume fed with essential prebiotics. You can’t plant seeds on unhealthy soil, so getting plenty of fiber in daily ensures a nice healthy stomach! Special days are no exception to this, including veggies and fruits at any opportunity enables you to feel great, stay on track, and not over-do it on the unhealthy offerings often available.
- Skinless chicken breast
- Red, green, and yellow bell peppers,
- White onions
- Remove skin and excess fat from the chicken breast
- Dice chicken breast into cubes
- Cube bell peppers
- Cut mushrooms in half
- Slice onions
- Arrange ingredients in a beautiful, colorful, healthy way on skewers
Previously featured in our Father’s Day Video, young, unripened jackfruit can be used as a great meat alternative. The fruit is as versatile as it is large! If left to ripen, it will become incredibly sweet and sticky; some compare it to common candy! It is quite large, so approaching it to cut and prepare it can be difficult, we were lucky to get a tutorial from Elizabeth, who grew up watching her mom cutting open and enjoying jackfruit with her whole family.
Pork Pineapple Skewers:
To take on the idea of making some tropical foods during your staycation while saying away from the super sugary condiments, we came up with our own flavorful marinade that incorporate pineapple along with other spices to marinate some lean pork meat. Who can say no to a delicious colorful grilled pork skewers!
- For the sauce:
- 1 tbsp Soy sauce
- 1 tbsp Amino acid
- ¼ tsp Allspice
- 1 tbsp Citrus marinade
- 1 tbsp blended pineapple
For the skewer:
- ½ lbs of pork
- Red onion
- Mix all the sauce ingredients together
- Marinated the meat for 30 minutes
- Cut the pineapple into cube
- And cut the bell peppers
- Put the pork, pineapple and the red onion onto a skewer
- Grill it and enjoy!
