Healthy St. Patrick’s Day Recipes!

St. Patrick’s Day is celebrated all over the world by people who dress up in their favorite green outfits and honor Ireland’s rich and historic culture. What better way to celebrate any fun holiday than with healthy food? although this day is meant for tiny green leprechauns, we must not forget to also still eat healthy and smart! Here are some fun recipes that relate to this day that are easy and kid-friendly.

Kale chips

Many snacks appeal to us when they come with a crunch! Often times, prepackaged snacks also come with refined sugars and grains. What better way than to satisfy your craving than a delicious, easy homemade treat? How did your kale chips turn out?

Ingredients:

  • Kale

  • Grapeseed oil

  • Sea salt

  • Lemon

Cooking Utensils:

  • Cutting board

  • Knife

  • Cooking pan

  • Oven

Directions:

  • Preheat oven to 350 degrees

  • Cut kale into chip size

  • Squeeze lemon to taste on top

  • Spray w/ grapeseed oil to lightly coat

  • Sprinkle w/ sea salt

  • Bake for 15 minutes

  • Enjoy

St. Patty’s Green Appetizer Trio

While celebrating holidays is as exciting for adults as it is for kids, they can often leave our stomachs full of candies, unhealthy snacks, and foods. We love the idea of making a festive tray of healthy green foods for all to enjoy. In case of nut allergies, replace the unsalted pistachios with unsalted sunflower seeds or dried edamame (soy beans).

Ingredients:

  • Green grapes, stems removed

  • Kale chips (see previous recipe)

  • Unsalted pistachios

Cooking Utensils:

  • Serving tray

Directions:

  • Arrange grapes, kale chips, and pistachios in shape desired, a shamrock would be a festive

Veggie Rainbow Salad

This is very visually appealing to young kids and even adults, and is a great way to introduce healthy vegetables in a fun way. Get kids involved by picking out the different colored vegetables of the rainbow together, like a game in the store. The veggies listed below will be arranged into a rainbow however you please.

Ingredients:

  • Red bell pepper

  • Radish

  • Orange bell pepper

  • Yellow bell pepper

  • Sugar snap Peas

  • Purple cabbage

  • Mozzarella cheese

Cooking Utensils:

  • Serving tray

  • Cutting board

  • Knife

Directions:

  • Cut veggies into strips

  • Arrange in a rainbow shape (Red, Orange, Yellow, Green, Blue, Purple)

  • Place cheese at the base as clouds
