St. Patrick’s Day is celebrated all over the world by people who dress up in their favorite green outfits and honor Ireland and their major accomplishments. What better way to celebrate any fun holiday than with healthy food?
Although this day is meant for tiny green leprechauns, we must not forget to also still eat healthy and smart! Here are some fun recipes that relate to this day that are easy and kid-friendly.
The first recipe is a green fruit skewer. This recipe is a fun way to persuade your child into trying new fruits that they may have never tried before.
On a skewer, stack only green fruit
Apples, pears, honeydew melon, kiwi and green grapes
Add a green ribbon at the top for a festive touch
The next deliciously green recipe is a Shamrock shake. This drink will get you and your child in the spirit of the holiday and have them begging for more of this wonderful treat.
- 1 cup unsweetened, vanilla almond milk
- 2 cups raw spinach
- 10 large, fresh mint leaves (plus extra for garnish)
- 1 frozen banana
- 1/2 cup frozen mango
Steps: Add almond milk, spinach and mint leaves to blender. Blend well. Add slice of banana along with the mango into the blender; blend well. Add ice if a thicker consistency is desired. Pour into two small glasses, garnished with extra mint leaves; serve and enjoy!
The next fun dish is a rainbow fruit platter. This is very visually appealing to young kids and even adults, and is a great way to introduce healthy fruits on this day. The fruits listed below will be arranged into a rainbow however you please.
- Strawberries, oranges, kiwi, blueberries, bananas on the end as the pot of gold
Last but not least, a healthy and easy snack to make for St. Patrick’s Day is a green pea hummus. This can be paired with healthy vegetables to dip with or whole grain crackers.
- 1 cup – Peas, green, raw
- 1/2 cup – chickpeas (garbanzo beans)
- 1 clove – garlic
- 1 tablespoon – olive oil
- 1/4 teaspoon – salt
- 1/8 teaspoon – black pepper, ground
Steps: Combine green peas, chickpeas, garlic, olive oil, salt, and pepper in a food processor. Process until completely smooth, at least 4-5 minutes. Enjoy!
