Create fun red, white and blue recipes for the 4th of July with your favorite berries! Berries not only taste good but are also full of essential vitamins, minerals and fiber. They are a great source of phytochemicals, a plant compound known for their disease fighting antioxidants.

Celebrate this 4th of July with these delicious and healthy recipes with berries!

img_5194Blueberry, Strawberry & Jicama Salsa  

Ingredients:

1 cup fresh blueberries

1 cup diced strawberries

1 cup diced jicama

1/3 cup chopped cilantro

1/4 cup finely chopped red onion

2 tablespoons finely chopped jalapeno pepper, stemmed and seeded

Juice of 1 large lime

Salt, to taste

Directions:

In a medium bowl, combine blueberries, strawberries, jicama, cilantro, red onion, jalapeno, and lime juice. Stir until well combined. Season with salt, to taste. Serve with tortilla chips.

*This salsa is also great with grilled fish or chicken. It is best eaten the same day it is made.

Ingredients:

½ Cup Strawberries

½ Cup Banana, peeled and sliced

½ Cup Blueberries

1 ½ Cup Plain Yogurt

Directions:

Puree each fruit separately, and combine each fruit with ½ cup of yogurt. Pour in the blueberry mix filling the bottom 1/3 of mold. Repeat with the banana mix and then the strawberry mix. Freeze for 5-6 hours.
